  • 2 tablespoons Coconut Oil (Vata and Pitta pacifying, Kapha aggravating)

  • 1/4 teaspoon Mineral Salt (Vata pacifying, Pitta aggravating, Kapha aggravating)

  • 3 cups Water (Vata and Pitta pacifying, Kapha aggravating)

Preparation:

  1. Bring the water to a boil in a medium saucepan. Once boiling, add the basmati rice, half of the coconut flakes, coconut oil, and salt. Stir to combine.

  2. Allow the mixture to return to a boil, then reduce the heat to a low simmer and cover the saucepan. Cook until the rice is tender and the water is absorbed, about 18-20 minutes.

  3. Meanwhile, in a small pan over medium heat, toast the remaining coconut flakes until they are lightly browned and fragrant. Be careful to avoid burning them.

  4. Once the rice is cooked, fluff it with a fork and sprinkle the toasted coconut flakes over the top as a garnish before serving.
