MUNG DAL, COCONUT KITCHARI (PITTA REDUCING)

Ingredients:

  • 1 cup Basmati Rice (Vata and Pitta pacifying, Kapha aggravating)

  • 1/3 cup Cilantro (Tridoshic)

  • 1/3 cup Coconut Flakes (Vata and Pitta pacifying, Kapha aggravating)

  • 2 tablespoons Ghee (Vata and Pitta pacifying, Kapha aggravating)

  • 3/4 inch Ginger, fresh (Tridoshic)

  • 1/2 cup Mung Bean (Vata aggravating, Pitta and Kapha pacifying)

  • 1/4 teaspoon Mineral Salt (Vata pacifying, Pitta and Kapha aggravating)

  • 1/2 teaspoon Turmeric (Vata pacifying, Pitta aggravating, Kapha pacifying)

  • 6 cups Water (Vata and Pitta pacifying, Kapha aggravating)

 

Preparation:

  1. Begin by washing the mung dal and basmati rice separately. If time allows, soak the mung dal for a few hours before draining.

  2. Combine ginger, coconut flakes, cilantro, and 1/2 cup of water in a food processor. Blend until the mixture is smooth and liquefied.

  3. In a large saucepan, heat the ghee over medium heat. Add the liquefied mixture from the food processor, along with turmeric and salt. Stir the mixture well and bring it to a boil to release the flavors.

  4. Incorporate the rice and mung dal into the saucepan, adding the six cups of water. Bring the mixture back to a boil.

  5. Allow the mixture to boil uncovered for five minutes. Then, cover the saucepan, leaving the lid slightly ajar, and reduce the heat to simmer. Cook for 25-30 minutes, or until the dal and rice are tender.
